Thanks for the kind words re that very old video of mine. I've given up EAA/astronomy but will offer some suggestions.
The lastest Sharpcap versions (for about the past 12 months now) seem to be weapon of choice for EAA due to its feature set. So you could use Sharpcap for your EAA and not bother with toaster if you can't figure it out.
But if you really want to use toaster ....
* Toaster will not monitor sub folders. I've only used sharpcap with toaster once about 3 years ago. I recall that despite setting sharpcap up to save in the toaster monitor folder that sharpcap would then create a sub-folder with the capture run name and date ... or something like that. All you had to do was change the folder being monitored by toaster ... in its settings button. Make sure you pressed the "STOP" button in toaster first. That's not Exit ... it is the button in the toaster menu which says "STOP". Then change the folder being monitored and click APPLY. It should then work fine.
* You may already know this tip but notice on the toaster menu bar there are two "Refresh" buttons ... hover help will tell you the left hand side one is Auto Refresh Pic. IE it will refresh the Viewer window with every new frame it has processed or seen in the monitor folder. Thats the one you want to press! I never use the other one over to its right.
* If neither of these work, reset toaster back to monitoring the normal default Monitor folder, and then try copying and pasting your images from their saved folder into the toaster default monitor folder. It should open them. If not then you have something wrong with the installation.
